Recommended vegan meal prep ingredients and equipment

Ready to stock your meal prep kitchen? Below you’ll find affiliate links to ingredients, equipment and tools I use in my meal prep kitchen and recommend to all of my students. Personally, I am not a big fan of having a variety of tools and equipment. I prefer to have minimal equipment that can be used for a variety of purposes so below you will find my preferred equipment that is versatile and easy to maintain.
Ingredients
Below are several unique ingredients that I purchase online and use often in my meal prep kitchen.
Sunflower Lecithin
This unique ingredient is a great emulsifier, meaning it helps fat and water combine. I use this ingredient in my plant milks to make them creamy and avoid separation.
This not an ingredient but is a supplement that is recommended by the doctors at the Physicians Committee for Responsible medicine. I make sure to purchase a vegan version as some contain dairy.
I prefer to use glass food storage containers with air-tight lids. I use a variety of glass containers, including mason jars and Pyrex containers. I’ve also found glass 3-compartment containers at Walmart.com that I think are really great for packing lunches to-go.
I use a VitaMix brand blender in my meal prep kitchen. I’ve found this blender is easy to clean, easy to store, and lasts years and years. I have two in my collection, one of which I have owned for about 16 years and it still works very well. I suggest checking eBay for VitaMix blenders, often you can get a great deal on a brand new blender and second-hand VitaMix blenders that are less expensive.
I use Pyrex brand mixing bowls and measuring cups. They are inexpensive, easy to clean and store, and are very well designed for meal prep. One of my favorite tools is the 8-cup glass measuring cup which I use to mix batters and doughs. It has a sturdy handle and is big enough to use a hand mixer in it.
I use bamboo cutting boards that are inexpensive and sturdy. I’ve found that bamboo boards last a very long time, are easy to clean and easy to store. I like to purchase a cutting board that is large enough to chop several items without needing additional boards. A large cutting board like the one pictured to left is ideal.
I use Wusthof brand kitchen knives. This was the recommended brand when I was in culinary school and I’ve used them ever since. The steel blade and handle are all one piece so you don’t have to worry about the blade coming off of the handle while chopping. These knives last for years and are easy to sharpen. I’ve found good prices on their basic sets on eBay.
I used to have a large Kitchenaid stand mixer however I rarely used it and it took up a lot of space in my kitchen. I decided to donate that mixer and replace it with a hand mixer. Kitchenaid brand is one of my favorite kitchen appliance brands and I’ve had great success with their hand mixer. It’s easy to use, easy to store, lightweight, and super cute. I use this hand mixer to make biscuit dough, cookie dough, and cake batters.
I have a Cuisinart brand food processor and it’s been working for over 10 years. This brand makes very easy-to-clean, easy-to-use food processors that are sturdy and efficient. I use a food processor to make pestos, doughs, shred carrots, potatoes and zucchini, blend baking mixes, and more. It’s a tool I highly recommend having available for quick and easy meal prep.
The Physicians Committee for Responsible Medicine recommends using stainless steel pots and pans when cooking because heavy metals such as aluminum may be leaching into the cooked food causing serious health issues. I use only stainless steel pots and pans because of this, as well as because these are the easiest to clean and are the best quality. My preferred brand of pots and pans is All-Clad.
Having a sturdy baking sheet is essential for meal prep. I use an aluminum baking sheet lined with parchment paper as recommended by the Physicians Committee for Responsible Medicine. The parchment paper acts as a barrier to the aluminum in the pan. Soon I plan to purchase stainless steel bakeware from All-Clad.
