Make these burritos when you have leftover brown rice.

 

Ingredients you’ll need include: Cooked brown rice, cooked beans, whole grain tortilla, spices and spinach leaves. Use any quantity of each item that you have available. Omit any ingredients that you do not have.
Short grain brown rice is ideal for these burritos because it is sticky and doesn’t fall out of the burrito when you pick it up. It’s also a very versatile rice that can be used for almost any type of cuisine.
Equipment you’ll need includes an oven, oven mitts, baking sheet, mixing bowl, potato masher and spoon.
First, 1. preheat oven to 425º. 2. Mash beans with spices in a bowl using potato masher. Add any spices, seasonings and herbs. Add chopped tomatoes and chiles if desired.

Build your burrito. 1. Place tortilla onto a flat surface. 2. Place 1/2 cup cooked rice onto tortilla. 3. Top with mashed beans. 4. Spread beans over rice. 5. Cover with spinach leaves.

Place rice onto tortilla. Spread rice evenly leaving about 1 inch of space around the rim of the tortilla.
Place a large dollop of mashed beans on top of the rice.
Spread beans over rice evenly.
Top with spinach leaves, if desired.
Bake your burrito. 1. Fold tortilla in half or in a burrito shape. 2. Place into preheated oven. 3. Bake for 5-10 minutes.
Tortilla can be folded in half or into a burrito shape. The folded in half shape is easiest.
Place burrito onto baking sheet and into preheated oven. Bake for 10 minutes, or until desired doneness. This step is optional, burrito can be enjoyed without baking.
While it’s baking 1. Put away leftover ingredients. 2. Wash the dishes. If you do these chores while your food is cooking, they won’t need to be done after you’ve finished eating. Take just 5 minutes and clean your work space while the food is in the oven.
Store leftover mashed beans in an airtight container in the refrigerator for up to five days. These beans can be enjoyed in burritos, tacos, on nachos, as well as a bean dip.
Wrap your burrito for later in aluminum foil like in the following photos:
Place burrito into center of foil.
Fold edges of foil up and over burrito.
Fold remaining sides up over burrito.
Seal tightly.
Place a paper towel around the wrapped burrito. This doubles as a napkin and an extra barrier.
