Wondering how to make an easy, oil-free vegan breakfast scramble? This breakfast scramble recipe is so easy to make, is packed with hearty and warm deliciousness, and it’s budget friendly. A scramble makes a great plant-based breakfast, lunch, dinner or snack. You can put this oil-free vegan breakfast scramble into tacos, burritos, enjoy it with toast, or on its own.

What is an oil-free vegan breakfast scramble?

Basically, a breakfast scramble is a dish you can prepare using a skillet and any type of legumes, such as tofu or cooked chickpeas. A scramble is made using crumbled tofu or mashed beans such as chickpeas. There is no oil required for making a breakfast scramble, instead simply use a little water to saute and prevent to food from sticking to the pan.

Breakfast scramble flavorings

You can add any flavorings to your breakfast scramble, however the most important is to add a little bit of ground turmeric powder. Turmeric gives the dish a nice yellow color as well as adds a unique flavor. Turmeric is also great for our bodies and is recommended by doctors to consume on a regular basis for disease prevention.

Why not use eggs in a breakfast scramble?

Eggs are packed with cholesterol (which our body already makes). According to the USDA labeling guidelines, eggs cannot be labeled “safe” or “healthy” due to the food borne illnesses they carry and the level of cholesterol in each egg. Because our bodies produce all the cholesterol we need, adding foods that contain cholesterol (such as eggs, meat, dairy, and seafood) contributes to high cholesterol levels on our bodies. Additionally, there is estrogen in eggs (and all animal products). Our bodies already produce estrogen so there is no need to add more estrogen into our bodies. An over abundance of estrogen can fuel tumor growth in our bodies which can lead to serious diet-related illness.

How to make an oil-free vegan breakfast scramble

The good news, is that we can make breakfast scrambles with food that will promote health and healing, such as beans. Beans contain fiber which helps our bodies remove toxins. They also contain protein, vitamins, minerals, and are very delicious. Here’s a basic step-by-step guide for making a delicious oil-free vegan breakfast scramble.

Oil-free tofu scramble directions

Step 1: Drain tofu.

Step two: Heat pan and crumble tofu into hot pan. Saute with onions for 3-5 minutes.

Step 3: Add ground turmeric powder.

Step 4: Saute scrambled tofu with ground turmeric powder for about 1-2 minutes.

Step 5: Enjoy breakfast scramble immediately or store in an airtight container in the refrigerator for up to 5 days.

Oil-free chickpea scramble directions

Step 1: Heat a skillet and add chickpeas and onions Saute for 3-5 minutes.

Step 2: Mash chickpeas in the pan with the back of a large spoon or using a potato masher.

Step 3: Add ground turmeric powder and saute for another 1-2 minutes. Enjoy immediately or store in an airtight container in the refrigerator for up to 5 days.

Ingredients

  • 1 lb. package organic firm or extra firm tofu or 1 1/2 cups cooked chickpeas, mashed
  • 1 tsp ground turmeric powder
  • 1/2 tsp iodized salt

Directions

How to make tofu scramble: Drain the package of tofu. Heat a large skillet. Add tofu into the pan and toss. Add ground turmeric powder and stir into scramble. Heat thoroughly, about 5 minutes.

How to make chickpea scramble: Drain chickpeas. Place chickpeas into the pan and toss with mushrooms and red onion. Use a potato masher to mash the chickpeas. Add ground turmeric powder and stir into scramble. Add spinach. Sauté another minute.

Serving: Enjoy with a toasted whole wheat or corn tortilla with avocado and salsa, or in a burrito, or just eat it out of the pan, whichever you prefer.
