How to make a vegan chocolate cake mix
Makes 1 8″ round vegan chocolate cake or 9 cupcakes
Chocolate cake mix ingredients
- 1/2 cup organic sugar
- 1 cup whole wheat flour, sifted
- 1/3 cup natural cocoa powder, sifted
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon iodized salt
Liquid add-in ingredients:
- 1 cup plant-based milk such as cashew milk, almond milk, or soy milk
- 1 teaspoon apple cider vinegar
- 1/3 cup applesauce
- 1 1/2 teaspoons vanilla extract (optional)
Here’s the basic steps for making a vegan chocolate cake mix:
- Step 1: In a large mixing bowl with a sifting tool, sift all of your dry ingredients including: flour, sugar, cocoa powder, baking powder, baking soda, salt. Then, mix well to combine ingredients thoroughly. Transfer ingredients to an airtight container until ready to use.
When you are ready to bake your cake mix, do these easy steps:
- Step 1: Preheat your oven to 350 degrees Fahrenheit and line your preferred baking sheet with parchment paper, or lightly grease.
- Step 2: Combine plant-based milk with apple cider vinegar in a bowl and whisk well. Set sit for five minutes. Add vanilla extract.
- Step 3: Pour dry cake mix into a large mixing bowl. Pour in liquid ingredients. Using a fork or a whisk, combine the liquid and dry together to make a smooth batter.
- Step 4: Pour batter into prepared baking pan. Place into preheated oven and bake according to your specific baking pan time listed below:
- 8″ round springform baking pan – 32-36 minutes
- 8″ round cake pan – 32-36 minutes
- Cupcake pan – 22-28 minutes
- Mini cupcake pan – 16-24 minutes
- Bundt pan – 32-40 minutes
- 8″ square baking dish – 32-36 minutes
To check for doneness, insert a toothpick into the center of the cake (where it is the thickest). The toothpick should come out clean with no batter on it. This means it’s done cooking. Remove the cake immediately and place onto a heat-proof surface to cool completely before frosting. Do not frost a hot cake, your frosting will melt and drip everywhere.
