Wondering how to make your own flatbread without oil, yeast or eggs? This super easy 4-ingredient vegan flatbread recipe takes just several minutes to prepare the dough and takes as little as six minutes to cook in a skillet. There is no oil, eggs or dairy in this recipe, instead it calls for tahini (sesame seed butter, or other nut or seed butter) which adds fat without refined oils. Making flatbread is quick and easy, here’s how to do it.
What is flatbread?
There are many types of flatbread, and flatbread is enjoyed throughout the world. Flatbread can be made with yeast or without yeast. I’m not a big fan of using yeast during baking for several reasons: Sometimes you may not have yeast available, yeast can die and become ineffective, it has an odd flavor, and oftentimes you have to “proof” your bread, meaning you have to wait for it to rise and this can be a lengthy process.

Enjoy your flatbread in a variety of ways
- Vegan flatbread dippers: Cut flatbread into triangles and enjoy with your favorite dip.
- Flatbread pizzas: Before baking, make into a pizza or calzone by spreading sauce on top and your favorite vegetable, herbs and spices. If making a calzone, fold into a pocket before baking.
- Flatbread tacos: Enjoy cooked flatbread as a taco with your favorite fillings.
- Flatbread quesadillas: Roll it very thin and make a hummus quesadilla with the cooked flatbread.

5-minute flatbread recipe (oil-free, vegan)
Makes four 6″ round flatbreads
Ingredients
- 1 cup whole wheat flour
- 1 tablespoon tahini or other nut or seed butter
- 1/2 tsp salt
- 1/2 cup cold water, plus 1-2 tablespoons more if needed
Directions
- In a medium sized bowl, combine flour and salt, whisk well.
- Add tahini into bowl. Use a fork, whisk or your fingers to mix tahini evenly into flour. Eventually, it will have look “sandy” when the tahini is evenly distributed throughout the flour.
- Add water. Using a fork, whisk or your hands, form into a dough ball.
- Cut dough ball into four equal pieces.
- Roll each piece into a ball with your hands.
- Then, flatten each ball into a thin disk (about 1/8″) using either a rolling pin on a floured work surface. Or, use a tortilla press lined with parchment paper.
Cook your flatbread:
- Skillet: Heat a skillet. Place flatbread onto skillet and cook over medium heat for about three minutes, or until starting to brown. Flip, and cook the other side for another three minutes, or until starting to brown. Remove from skillet and enjoy.
- Oven: Heat an oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Place flatbreads onto prepared baking sheet and into preheated oven. Bake for 5-10 minutes, or until cooked through and starting to brown. Flip halfway through if desired.
Flatbread flavoring tips:
- Make these flatbreads ahead of time and store in the refrigerator or freezer. Reheat in a skillet or hot oven for several minutes.
- Add any desired flavorings into this flatbread, such as herbs, spices, chopped garlic and onions, and cooked vegetables.
- Add 2 tablespoons sugar and 1/2 tsp ground cinnamon powder to make a sweet flatbread. Toss cooked sweet flatbreads in more cinnamon and sugar for an extra special treat.
